Snowman Pancakes

This morning I woke up to this view...


welcome winter!  I thought today would be a perfect day to make:


Okay, I admit... these aren't the cutest. In fact the snowman face looks kind of scary ha ha. But they sure are delicious! I made these with my favorite pancake recipe from THE FOOD NANNY cookbook. If you are looking for an awesome cookbook, you can get it here

This is the recipe:

1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
2 tablespoons butter, melted

Directions:

1.  Preheat an electric griddle to 375 degrees or place a stove-top griddle or skillet over medium-high heat.

2.  Mix all ingredients in a bowl, and whisk until lumps are gone. 

3. Spray griddle before pouring batter.

4. To make the snowman shape, start with the base, and add each layer with less and less batter as you go.  I usually start the base with 1/4 cup and go from there. Make it as big or little as you want!


5. Cook the pancakes until bubbles begin popping on top, about two minutes.  Turn them and cook about 1 minute. 

6. Once the pancakes are finished cooking, then its time to decorate! Be creative! This morning, I was low on my snowman decorations, so I made do with what I had on hand. But here are some ideas:

-Use scrambled eggs as a sun
-cook bacon and place as the ground, or use it as a scarf.
- Use M&Ms for buttons. (The mini M&Ms work great to make the face!
-Put cotton candy on the base as snow.
 -Let the kids get involved, and create their own masterpiece!
